Abstract

From different milk products and wheat 27 lactic acid bacteria were isolated. It was selected 12 promising strains of bacteria, strains S-3, KF-1, ТV-2, ТV-3 and ТV-4 had high acid production ability and they were taken for further work. Strains ТV-3 and ТV-4 showed high level of acid production - more than 200 degrees (based on Turner) in the growth medium MRS (de Man, Rogoza and Sharpe) with a lactose.
